Let's talk eggplant prep! Slice the eggplant in rings. Set a colander or wire rack over a sink, bowl, or rimmed baking sheet. Sprinkle salt generously over all sides of the eggplant and add to colander. Let sit for 15 minutes. Rinse lightly under cold water, place on paper towels, and pat dry. Toss lightly with olive oil and salt. Grill on a medium heat, 2 minutes per side. Chop and enjoy!
